Manager: The Banana Island Patisserie

BRIEF DESCRIPTION:  The position of the manager consists of planning, directing, and coordinating activities of an organisation that serves food and beverages


REPORTING STRUCTURE:  The manager reports to the CEO


Essential functions:

  • Manages all daily restaurant operations (sales, expenses, diarizing etc)
  • Verifies appropriate safety, food Handling and food storage procedures are followed
  • Oversees purchasing of food, equipment and other necessary supplies including vendor sourcing, negotiation and procurement
  • Schedules and inspects food and supplies deliveries
  • Maintains high quality standard for food preparation and service
  • Ensures restaurant cleanliness and organisation presents a positive image
  • Establishes and maintains appropriate security/protocol for guests, employee s and facility safety
  • Follows and enforces company policies and procedures
  • Ensures guest satisfaction
  • Ability to meet financial goals, including sales targets as well as budgeting and cost control measures
  • Record sales and expenses for account purposes
  • Timely completion of all financial obligation and reporting, including payroll, tax fillings, payables and receivables
  • Ensures sufficient staffing levels,  training, including day-to-day shifts and ongoing staffing plans
  • Recruiting, screening, interviewing and selecting applicants


  • 5 or more years in guest services experience in a lodging operation
  • Leadership qualities, along with strong organizational and decision-making skills
  • Strong professional communication skills, including ability to provide outstanding customer service, maintain positive employee relations
